Spiced Dried Plums

Ingredients
3 cups pitted dried plums (prunes) (about 18 ounces)
2 three-inch cinnamon sticks
2 teaspoons whole cloves
2 teaspoons whole allspice
4 cups water
3 cups brown sugar
1 1/2 cups red wine vinegar
Directions
Wash dried plums. Wrap spices securely in cheesecloth. In nonreactive saucepan, bring water, sugar and vinegar to a boil. Add spices and dried plums; simmer 1 hour. Store in refrigerator, or seal in jars while hot.
