Plumberry Granita
Prep Time 10 minutes Serves 12
Ingredients
1 cup (about 6 ounces) pitted dried plums (prunes)
6 tablespoons hot water
4 cups white grape juice
1 package (10 ounces) frozen sweetened raspberries, partially thawed
2 tablespoons lemon juice
Directions
In blender container, combine dried plums and water; process until finely chopped. Add grape juice, raspberries and lemon juice; process until blended. Pour into shallow pan; freeze 2 hours, stirring every 30 minutes. Freeze an additional 1 to 2 hours or until firm, but not solid.
To serve, let stand at room temperature to soften slightly; stir or break up, as necessary, to form coarse texture.
Tip: Granitas should be served slightly thawed. Leftover granita may be refrozen in covered container; let stand and break up before serving.
