Orange Ricotta Prunes

Ingredients:Orange Ricotta Prunes

  • 8 prunes
  • prune juice
  • 150g of goat ricotta cheese
  • 1 orange
  • salt

Serves: 4

Directions:
Soak the prunes in their juice until soft and remove the pit. Whip the ricotta cheese with salt and grated orange peel.

Place the ricotta in a pastry bag and fill the prunes. Peel the orange completely and cut into 8 slices, place one slice  on every plate and lay one stuffed prune on top of the orange slices. Serve with a good Franciacorta brut.
