Healthy Turkey Salad Pockets

Healthy Turkey Salad PocketsPrep Time: 15 minutes

  • 50 oz. diced cooked turkey or chicken
  • 20 oz. pitted dried plums, quartered*
  • 8 oz. sliced celery
  • 16 oz. plain nonfat yogurt
  • 2 oz. sliced green onions
  • 2 oz. sweet-hot mustard
  • To Taste salt and pepper
  • 25 each whole-wheat pita breads, halved
  • 25 each lettuce leaves

*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.


In a bowl, combine turkey, dried plums, celery, yogurt, green onions and mustard until thoroughly mixed. Season to taste with salt and pepper. Store covered, in refrigerator for up to 3 days.

To serve, place 1 lettuce leaf and spoon 1/2 cup turkey mixture into each pita pocket.
