Dried Plum Whip (AKA Prune Whip)

Ingredients
1 pound dried plums/prunes
3 egg whites
Pinch of salt
1/2 cup sugar
1 teaspoon vanilla
1/2 teaspoon salt
Directions
Stew a package of dried plums/prunes your favorite way and dice to equal 1 cup. Beat whites of 3 eggs with a pinch of salt until foamy. Slowly add 1/2 cup sugar, 1 tablespoon at a time. Beat on high speed until meringue forms firm peaks. Fold in prepared dried plums/prunes adding 1 teaspoon vanilla. Pour mixture into buttered casserole dish. Sprinkle 1/2 teaspoon sugar over the top. Bake at 350 for 15 minutes. Serve warm or cold with whipped cream.
