Disappearing Dried Plum Cake

Prep Time 20 minutes    Cook Time 1 hour 20 minutes     Serves 12

Ingredients

Cake:

2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup milk
1 tablespoon white vinegar
1 cup vegetable oil
3 eggs, beaten
1 cup cooked dried plums (prunes), chopped
1/2 cup walnuts, chopped

Hard Sauce:

1 cup sugar
1/2 cup buttermilk
4 tablespoons butter
1 tablespoon light corn syrup
1/2 teaspoon baking soda

Directions

Cake:

Heat oven to 325°F. Sift dry ingredients into large mixing bowl. Stir together milk and vinegar. Add milk mixture, oil and eggs to dry ingredients. Stir together; do not overmix. Stir in dried plums and walnuts. Scrape batter into tube pan. Bake 1 hour and 10 minutes, or until cake tests done when lightly pressed with fingertip. Cool completely on pan before unmolding. Serve with Hard Sauce (recipe below).

Hard Sauce:

In saucepan, bring all ingredients to a boil. Lower heat and simmer 10 minutes. Drizzle over cake.
