Citrus Slaw

Colorful, tasty and healthy, this slaw is sure to be a summertime favorite
Ingredients
1 cup prepared nonfat herb vinaigrette
1 cup frozen orange juice concentrate, thawed
16 cups shredded napa cabbage
4 oranges, peeled and segmented
4 red apples, halved, cored and diced
4 cups (about 24 ounces) Stapleton’s pitted dried plums (prunes), quartered
2 cups sliced celery
1 cup sliced green onions
Pepper (optional)
Directions
In large bowl, whisk together vinaigrette and juice concentrate. Add cabbage, oranges, apple, dried plums, celery and green onions, tossing to coat. Season with pepper, if desired.
