Sausage and Dried Plum Ragu with Pasta

Serves 25


4 lb – lean Italian turkey sausage
58 oz – diced tomatoes, not drained
2 – #10 cans of Stapleton’s Pitted Prunes*, coarsely chopped (24 oz)
4 – medium onions, chopped
8 T – chopped fresh basil
8 – cloves of garlic, finely chopped
2 tsp – salt
5 lb – cooked penne pasta

*Drain liquid and pat dry with a paper towel.


Remove casings from sausage. In a skillet, brown sausage over medium heat 7 to 10 minutes or until no longer pink, breaking up into crumbles; pour off dripping. Return sausage to skillet. Add tomatoes, dried plums, onion, basil, garlic and salt; bring to a boil. Reduce heat to low. Cover; simmer 14 to 16 minutes, stirring occasionally. Serve over pasta.
