Steak fillets with Lardo di Colonnata and Prunes
Ingredients:
- 4 steak fillets
- flour
- extra Virgin Olive Oil
- 120g Lardo di Colonnata
- 4 prunes
- 150 ml prune juice
- 1/2 bottle of quality red wine (nobile of Montepulciano)
- salt
Directions:
Let the prunes boil in the simmering juice and wine. Wrap the fillets with the slices of lardo di Colonnata and tie them with some string. Coat the fillets with flour, brown them in some oil and pour the wine with the boiled prunes. Check the salt and let the sauce reduce.
Serve the steak fillets with its wine and prune sauce.
