Dried Plum, Tomato & Feta Salad

Prep Time 20 minutes    Cook Time 0 minutes     Serves 4

Ingredients

2 pints cherry tomatoes, each cut in half
1/2 cup crumbled feta cheese
1/2 cup thinly sliced red onion
1/2 cup (about 3 ounces) finely chopped dried plums (prunes)
1/3 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon crushed garlic
Torn salad greens (optional)

Directions

In medium bowl, combine tomatoes, feta cheese, onion and dried plums; set aside. In small bowl, whisk together oil, vinegar and garlic. Add to tomato mixture; toss lightly to coat. Serve with salad greens, if desired. Click here for the low fat version
